A creamy chilled fruit salad with strawberries, pineapple, grapes, mango, kiwi, honey vanilla dressing, coconut, and pecans.

# Ingredients:

For the fruit

01 - 2 cups (300 g) fresh strawberries, hulled and thickly sliced
02 - 2 cups (330 g) fresh pineapple, diced
03 - 1 cup (150 g) red seedless grapes, halved
04 - 1 cup (150 g) green seedless grapes, halved
05 - 1 1/2 cups (250 g) ripe mango, diced
06 - 3 kiwis, peeled and sliced into half-moons
07 - 1 cup (150 g) fresh blueberries
08 - 2 firm bananas, sliced
09 - 1 tablespoon fresh lemon juice, for the bananas

For the creamy dressing

10 - 1 cup (240 g) plain Greek yogurt
11 - 1/2 cup (120 ml) cold heavy whipping cream
12 - 1/4 cup (85 g) honey, plus more to taste
13 - 1 teaspoon vanilla extract
14 - 1 tablespoon fresh lemon or lime juice
15 - 1 pinch fine salt

For the topping

16 - 1/3 cup (30 g) sweetened shredded coconut
17 - 1/2 cup (55 g) chopped toasted pecans
18 - 1/2 cup (25 g) mini marshmallows, optional

# Instructions:

01 - Rinse the strawberries, grapes, blueberries, and kiwi. Dry them well on clean towels so the dressing stays creamy.
02 - Slice the strawberries, dice the pineapple and mango, halve the grapes, and slice the kiwi. Keep the bananas separate until the dressing is ready.
03 - Beat the cold heavy cream in a chilled bowl until soft peaks form, about 2-3 minutes. Do not whip until stiff.
04 - In a large bowl, stir the Greek yogurt, honey, vanilla, lemon or lime juice, and salt until smooth. Fold in the whipped cream gently.
05 - Add the strawberries, pineapple, grapes, mango, kiwi, and blueberries to the dressing. Fold with a rubber spatula until lightly coated.
06 - Toss the banana slices with 1 tablespoon lemon juice, then fold them into the salad. Top with coconut, pecans, and marshmallows. Cover and chill for at least 1 hour before serving.

# Notes:

01 - Best served cold after 1-4 hours of chilling.
02 - For the firmest texture, add bananas and toppings shortly before serving.
03 - Leftovers are best within 24 hours and should stay refrigerated.
