Cheesy, Crispy, Pizza Quesadilla in Every Bite (Print Version)

# Ingredients:

For the quesadillas

01 - 2 large (10-inch) flour tortillas
02 - 1 1/2 cups (170 g) shredded low-moisture mozzarella cheese, divided
03 - 1/3 cup (80 ml) thick pizza sauce, plus more for dipping
04 - 8 thin salami slices
05 - 16 pepperoni slices
06 - 1/2 teaspoon dried oregano
07 - Pinch red pepper flakes, optional
08 - 1 teaspoon olive oil, only if needed for the pan

# Instructions:

01 - Place a large nonstick skillet over medium heat and let it warm for 2 minutes. Keep the heat at medium so the cheese crisps without burning.
02 - Scatter about 1/3 cup mozzarella into the skillet in a thin half-moon. Lay one tortilla over the cheese and press gently for 1-2 minutes, until the cheese is melted and golden at the edges.
03 - Slide a thin spatula under the cheese crust and flip the tortilla so the crisp cheese side faces up. Spread half the pizza sauce on one half, then add half the salami, pepperoni, oregano, red pepper flakes, and 1/3 cup mozzarella.
04 - Fold the tortilla over the filling and press lightly. Cook for 2-3 minutes per side, until the tortilla is golden and the cheese inside is melted. Use a few drops of olive oil only if the pan looks dry.
05 - Repeat with the second tortilla and remaining ingredients. Rest each quesadilla for 1 minute, then slice into wedges and serve warm with extra pizza sauce.

01 - Use thick pizza sauce to keep the tortilla crisp.
02 - Medium heat gives the cheese time to crisp before the tortilla browns too far.
