Chicken Parmesan Rice (Print Version)

# Ingredients:

For the chicken

01 - 1 1/4 lb (565 g) boneless, skinless chicken breast, cut into bite-size pieces
02 - 1 teaspoon Italian seasoning
03 - 1/2 teaspoon paprika
04 - 3/4 teaspoon kosher salt, plus more to taste
05 - 1/2 teaspoon black pepper
06 - 2 tablespoons olive oil

For the rice

07 - 1 small yellow onion, finely diced
08 - 3 cloves garlic, minced
09 - 1 1/2 cups (285 g) long-grain white rice
10 - 3 cups (720 ml) low-sodium chicken broth
11 - 1/2 cup (120 ml) heavy cream
12 - 3/4 cup (65 g) freshly grated Parmesan cheese, plus more for serving
13 - 1/2 cup (55 g) shredded mozzarella cheese
14 - 1/4 teaspoon red pepper flakes, optional
15 - 2 tablespoons chopped fresh parsley

# Instructions:

01 - Toss the chicken pieces with Italian seasoning, paprika, salt, and black pepper until evenly coated.
02 - Heat olive oil in a large deep skillet over medium-high heat. Add the chicken in an even layer and cook for 5-7 minutes, turning as needed, until golden and cooked through. Transfer to a plate.
03 - Lower the heat to medium. Add the onion to the same skillet and cook for 2-3 minutes until softened. Stir in the garlic and cook for 30 seconds.
04 - Add the rice and stir for 1-2 minutes until the grains are lightly coated in the pan juices.
05 - Pour in the chicken broth and scrape the bottom of the skillet. Bring to a boil, reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is tender and most of the liquid is absorbed.
06 - Reduce the heat to low. Stir in the heavy cream, Parmesan, mozzarella, and red pepper flakes until melted and creamy.
07 - Fold the chicken back into the rice. Cover and rest for 5 minutes, then garnish with parsley and extra Parmesan before serving.

# Notes:

01 - Best served right after the five-minute rest while the rice is creamy.
02 - Use low-sodium broth so the Parmesan does not make the dish too salty.
03 - Add warm broth by the splash if the rice thickens before serving.
