Creamy Southwest Chicken Salad (Print Version)

A creamy Southwest chicken salad with rotisserie chicken, black beans, corn, crunchy vegetables, cilantro, and lime dressing.

# Ingredients:

For the salad

01 - 3 cups (420 g) shredded rotisserie chicken
02 - 1 can (15 oz or 425 g) black beans, rinsed and well drained
03 - 1 cup (165 g) corn kernels, canned, thawed frozen, or cooked fresh
04 - 1 cup (150 g) diced firm tomatoes
05 - 1 cup (130 g) diced cucumber
06 - 1 red bell pepper, diced
07 - 1/4 cup (35 g) finely diced red onion
08 - 1/4 cup (10 g) chopped fresh cilantro

For the creamy lime dressing

09 - 1/2 cup (115 g) mayonnaise
10 - 1/4 cup (60 g) sour cream
11 - 2 tablespoons fresh lime juice, from about 1 lime
12 - 1 teaspoon smoked paprika or sweet paprika
13 - 1/2 teaspoon onion powder
14 - 1/2 teaspoon garlic powder
15 - 1 teaspoon granulated sugar
16 - 1/2 teaspoon fine salt, plus more to taste
17 - 1/4 teaspoon black pepper
18 - 1/8 to 1/4 teaspoon cayenne pepper, to taste

For serving

19 - Tortilla chips, lettuce cups, chopped romaine, or flour tortillas

# Instructions:

01 - Shred the rotisserie chicken into bite-size pieces. Dice the tomatoes, cucumber, bell pepper, red onion, and cilantro.
02 - Rinse the black beans and drain them well. Drain the corn, then pat both lightly dry if they look wet.
03 - In a large bowl, whisk the mayonnaise, sour cream, lime juice, paprika, onion powder, garlic powder, sugar, salt, black pepper, and cayenne until smooth.
04 - Add the chicken, beans, corn, tomatoes, cucumber, bell pepper, red onion, and cilantro to the dressing. Fold gently until evenly coated.
05 - Cover and chill for 20-30 minutes. Taste before serving and adjust with more lime juice, salt, or cayenne as needed.
06 - Serve with tortilla chips, in lettuce cups, in wraps, or over chopped romaine. Keep leftovers refrigerated.

# Notes:

01 - Chilling for 20-30 minutes improves the flavor.
02 - Best eaten within 3-4 days when stored airtight in the refrigerator.
03 - Add avocado only right before serving if using.
