Cilantro Lime Rice (Print Version)

Fluffy cilantro lime rice with garlic, fresh lime zest, lime juice, and chopped cilantro for an easy side dish.

# Ingredients:

For the rice

01 - 1 cup (190 g) long-grain white rice
02 - 1 tablespoon olive oil
03 - 1 large garlic clove, minced
04 - 1 3/4 cups (415 ml) vegetable broth or water
05 - 1/2 teaspoon kosher salt, plus more to taste

For finishing

06 - 1 teaspoon finely grated lime zest
07 - 2 tablespoons fresh lime juice
08 - 1/3 cup chopped fresh cilantro
09 - 1 tablespoon sliced scallion greens, optional

# Instructions:

01 - Place the rice in a fine-mesh strainer and rinse under cool water until the water runs mostly clear. Drain well.
02 - Heat the olive oil in a medium saucepan over medium heat. Add the garlic and cook for about 30 seconds, then add the rice and stir for 1 minute until glossy.
03 - Add the broth and salt. Bring to a boil, cover tightly, reduce the heat to low, and cook for 15-18 minutes until the liquid is absorbed.
04 - Remove the pan from the heat and let it stand, still covered, for 10 minutes. Do not lift the lid during this rest.
05 - Fluff the rice with a fork. Fold in lime zest, lime juice, cilantro, and scallion greens if using. Taste and add more salt or lime juice as needed.

# Notes:

01 - Best served warm right after the lime and cilantro are added.
02 - Use chicken broth instead of vegetable broth for a richer non-vegetarian version.
03 - Cool leftovers quickly and refrigerate in a shallow airtight container.
