Cinnamon Apple Cake - 1st Recipes Style (Print Version)

A moist one-bowl cinnamon apple cake with tender chopped apples, walnuts, and a crisp cinnamon sugar top.

# Ingredients:

For the cake

01 - 1 1/2 cups (188 g) all-purpose flour
02 - 2 teaspoons ground cinnamon
03 - 1 teaspoon baking soda
04 - 1/2 teaspoon baking powder
05 - 1/2 teaspoon fine salt
06 - 2 large eggs, room temperature
07 - 1/2 cup (120 ml) vegetable oil or canola oil
08 - 3/4 cup (150 g) granulated sugar
09 - 1/4 cup (55 g) packed light brown sugar
10 - 1 teaspoon vanilla extract
11 - 1 1/2 cups (180 g) peeled finely chopped firm apples, from 1 large or 2 small apples
12 - 1/2 cup (55 g) chopped walnuts

For the topping

13 - 1 tablespoon granulated sugar
14 - 1/2 teaspoon ground cinnamon

# Instructions:

01 - Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
02 - Peel and finely chop the apples into about 1/4-inch pieces. Set them aside while you mix the batter.
03 - In a large bowl, whisk the eggs, oil, granulated sugar, brown sugar, and vanilla until smooth and slightly glossy.
04 - Add the flour, cinnamon, baking soda, baking powder, and salt. Stir with a spatula just until combined.
05 - Fold in the chopped apples and walnuts until evenly distributed. The batter will be thick.
06 - Spread the batter in the prepared pan. Stir the topping sugar and cinnamon together, sprinkle it over the batter, and bake for 40-45 minutes until a toothpick inserted in the center comes out clean or with a few moist crumbs.
07 - Cool in the pan for 20 minutes, then loosen the edges and turn out if desired. Slice after the cake has settled so the crumb stays neat.
