Coconut Lime Slush (Print Version)

A creamy, citrusy Coconut Lime Slush made with coconut milk, fresh lime juice, condensed milk, and ice in about 8 minutes.

# Ingredients:

For the slush

01 - 1 cup (240 ml) full-fat coconut milk, well shaken and chilled
02 - 1/4 cup (60 ml) fresh lime juice, from 2 to 3 limes
03 - 1 teaspoon finely grated lime zest
04 - 3 tablespoons sweetened condensed milk, plus more to taste
05 - 1 1/2 to 2 cups (210 to 280 g) ice
06 - 1 to 2 tablespoons cold water, only if needed for blending
07 - 1 small pinch fine salt

For serving

08 - Lime wheels or wedges
09 - 1 tablespoon toasted coconut, optional

# Instructions:

01 - Use cold coconut milk and shake or whisk it until smooth before measuring. This keeps the drink creamy and helps prevent oily streaks.
02 - Add the coconut milk, lime juice, lime zest, sweetened condensed milk, salt, and 1 1/2 cups ice to the blender.
03 - Blend on high until thick, pale, and frosty. Stop and scrape down the sides if coconut milk clings near the top.
04 - Add more ice for a thicker slush. Add cold water 1 tablespoon at a time only if the blender needs help moving.
05 - Taste while cold. Add more lime for tang or more condensed milk for sweetness, then pour into chilled glasses and garnish with lime and toasted coconut if using.

# Notes:

01 - Best served immediately while thick and icy.
02 - Double the recipe in two blender batches for the smoothest texture.
03 - For a dairy-free version, use sweetened condensed coconut milk.
