Creamy Alfredo Lasagna Soup: A Comforting Twist on a Classic (Print Version)

A rich one-pot Alfredo lasagna soup with sausage, tender noodles, Parmesan, mozzarella, and a spoonful of ricotta on top.

# Ingredients:

For the soup base

01 - 1 tablespoon olive oil
02 - 1 lb (450 g) mild Italian sausage, casings removed if needed
03 - 1 small yellow onion, finely diced
04 - 4 cloves garlic, minced
05 - 1 1/2 teaspoons Italian seasoning
06 - 1/4 teaspoon red pepper flakes, optional
07 - 5 cups (1.2 L) low-sodium chicken broth
08 - 8 oz (225 g) lasagna noodles, broken into 2-inch pieces

For the Alfredo finish

09 - 1 1/2 cups (360 ml) half-and-half
10 - 4 oz (115 g) cream cheese, cubed and softened
11 - 1 cup (100 g) freshly grated Parmesan cheese, plus more for serving
12 - 1 cup (115 g) shredded mozzarella cheese
13 - 2 cups (60 g) baby spinach, roughly chopped
14 - 1/8 teaspoon ground nutmeg
15 - Salt and black pepper, to taste

For serving

16 - 3/4 cup (185 g) whole-milk ricotta cheese
17 - 2 tablespoons chopped fresh parsley or basil
18 - Extra black pepper and Parmesan

# Instructions:

01 - Heat olive oil in a Dutch oven over medium-high heat. Add the sausage and cook for 6-8 minutes, breaking it into small crumbles, until browned and cooked through.
02 - Add the onion and cook for 3-4 minutes until softened. Stir in garlic, Italian seasoning, and red pepper flakes and cook for 1 minute until fragrant.
03 - Pour in the chicken broth and scrape the bottom of the pot. Bring to a simmer, add broken lasagna noodles, and cook for 10-12 minutes, stirring often, until just tender.
04 - Reduce heat to medium-low. Stir in half-and-half and cream cheese until the cream cheese melts and the broth looks smooth. Do not let the soup boil hard.
05 - Add Parmesan and mozzarella a handful at a time, stirring well after each addition. Stir in spinach and nutmeg and cook for 1-2 minutes until the spinach wilts.
06 - Taste and add salt and black pepper as needed. Ladle into bowls and top with ricotta, parsley, extra Parmesan, and black pepper.
