Cool Down with This Creamy Watermelon Yogurt Drink (Print Version)

A creamy watermelon yogurt drink made with ripe watermelon, Greek yogurt, lime, honey, and ice for a light summer cooler.

# Ingredients:

For the drink

01 - 4 cups (600 g) seedless watermelon, cubed and chilled
02 - 3/4 cup (180 g) plain Greek yogurt
03 - 2 tablespoons honey, plus more to taste
04 - 2 tablespoons fresh lime juice
05 - 1 cup (140 g) ice cubes, plus more for serving
06 - 1 small pinch fine salt
07 - 6 fresh mint leaves, plus more for garnish
08 - 1-3 tablespoons cold water, only if needed to blend

# Instructions:

01 - Use cold watermelon for the best texture. If the fruit is room temperature, refrigerate the cubes for at least 30 minutes before blending.
02 - Place the watermelon, Greek yogurt, honey, lime juice, ice, salt, and mint in a blender. Add 1 tablespoon cold water only if your blender needs more liquid to start.
03 - Blend on high for 30-45 seconds, until the drink is creamy, pale pink, and frothy. Avoid blending longer than needed so it stays cold.
04 - Taste the drink. Add a little more honey for sweetness or more lime juice for tang, then blend for 5 seconds to combine.
05 - Pour into chilled glasses over ice. Garnish with mint leaves and small watermelon wedges if desired.

# Notes:

01 - Best served immediately after blending.
02 - For a thicker smoothie texture, use frozen watermelon cubes and reduce or skip the ice.
03 - Leftovers can be refrigerated for up to 24 hours and re-blended before serving.
