Lay the tortilla on a board. Spread the mayonnaise and mustard in a thin, even layer, leaving about 1/2 inch around the edge.

Place the Muenster in the center. Add the tomato slices, ham, salami, cheddar, and a little black pepper if using. Keep the filling compact.

Fold the left and right sides inward, then fold the bottom up and the top down to make a sealed rectangle. Place it seam-side down.

Heat a nonstick skillet over medium heat. Sprinkle 1/4 cup of the mozzarella into a rectangle roughly the size of the folded tortilla.

Set the tortilla pocket seam-side down on the melting mozzarella. Cook for 2-3 minutes, until the cheese is deep golden and releases easily.

Lift the pocket out briefly. Sprinkle the remaining 1/4 cup mozzarella into the pan, then flip the pocket onto it. Cook 2-3 minutes more until crisp.

Transfer to a cutting board and rest for 1 minute. Slice in half and serve hot while the cheese crust is crisp.
