If You Love Crispy Cheese, Try This Crispy Cheesy Ham & Salami Tortilla Pocket (Print Version)

A hot folded tortilla pocket filled with ham, salami, tomato, mustard, and melty cheese, then crisped in a skillet on a golden mozzarella crust.

# Ingredients:

For the pocket

01 - 1 large 10-inch flour tortilla
02 - 1 tablespoon mayonnaise
03 - 1 teaspoon Dijon or yellow mustard
04 - 2 slices Muenster cheese
05 - 2 thin tomato slices, patted dry
06 - 2 slices deli ham
07 - 4 thin slices salami
08 - 1 slice cheddar cheese
09 - 1/2 cup (55 g) shredded low-moisture mozzarella, divided
10 - Black pepper, optional

# Instructions:

01 - Lay the tortilla on a board. Spread the mayonnaise and mustard in a thin, even layer, leaving about 1/2 inch around the edge.
02 - Place the Muenster in the center. Add the tomato slices, ham, salami, cheddar, and a little black pepper if using. Keep the filling compact.
03 - Fold the left and right sides inward, then fold the bottom up and the top down to make a sealed rectangle. Place it seam-side down.
04 - Heat a nonstick skillet over medium heat. Sprinkle 1/4 cup of the mozzarella into a rectangle roughly the size of the folded tortilla.
05 - Set the tortilla pocket seam-side down on the melting mozzarella. Cook for 2-3 minutes, until the cheese is deep golden and releases easily.
06 - Lift the pocket out briefly. Sprinkle the remaining 1/4 cup mozzarella into the pan, then flip the pocket onto it. Cook 2-3 minutes more until crisp.
07 - Transfer to a cutting board and rest for 1 minute. Slice in half and serve hot while the cheese crust is crisp.

# Notes:

01 - Pat tomato dry before adding it so the tortilla does not steam inside.
02 - Medium heat gives the cheese time to brown without burning.
03 - Best served immediately after cooking.
