Crispy Chicken Rice Paper Dumplings (Print Version)

Savory ground chicken, cabbage, carrots, and shiitake mushrooms wrapped in rice paper and air fried until crisp, with a sweet chili soy dipping sauce.

# Ingredients:

For the dumplings

01 - 1 lb (450 g) ground chicken
02 - 1 cup (85 g) finely shredded green cabbage
03 - 1/2 cup (55 g) grated carrot
04 - 1/2 cup (45 g) finely diced shiitake mushrooms
05 - 3 green onions, finely sliced
06 - 1 large egg
07 - 1 tablespoon gluten-free tamari
08 - 1 tablespoon gluten-free oyster sauce
09 - 1 teaspoon grated fresh ginger
10 - 2 garlic cloves, finely grated or minced
11 - 1 teaspoon toasted sesame oil
12 - 1/2 teaspoon kosher salt
13 - 1/4 teaspoon black pepper
14 - 24 rice paper wrappers, 8 to 9 inches wide
15 - Neutral oil spray

For the dipping sauce

16 - 3 tablespoons gluten-free tamari
17 - 1 tablespoon rice vinegar
18 - 1 teaspoon honey
19 - 1 teaspoon toasted sesame oil
20 - 1 teaspoon grated fresh ginger
21 - 1 tablespoon chili garlic oil
22 - 1 green onion, thinly sliced
23 - 1 teaspoon sesame seeds

# Instructions:

01 - In a large bowl, combine the ground chicken, cabbage, carrot, mushrooms, green onions, egg, tamari, oyster sauce, ginger, garlic, sesame oil, salt, and pepper. Mix until the filling looks evenly combined and slightly sticky.
02 - In a small bowl, whisk together the tamari, rice vinegar, honey, sesame oil, ginger, chili garlic oil, sliced green onion, and sesame seeds. Set aside while you wrap the dumplings.
03 - Fill a shallow dish with room temperature water. Dip one wrapper for 5-8 seconds, then place it on a damp cutting board. It should still feel a little firm because it will continue to soften.
04 - Spoon about 2 tablespoons of filling into the center of the wrapper. Fold the bottom over the filling, fold the top down, then fold in both sides to form a square parcel.
05 - Dip a second wrapper for 5-8 seconds and place the folded dumpling seam-side down in the center. Fold again the same way to seal the dumpling in a sturdier second layer.
06 - Preheat the air fryer to 375°F (190°C). Spray the basket and both sides of the dumplings with oil. Air fry in a single layer for 14-16 minutes, flipping halfway, until crisp and the center reaches 165°F (74°C).
07 - Let the dumplings rest for 2 minutes so the filling settles. Serve hot with the dipping sauce.
