In a large bowl, combine the ground chicken, cabbage, carrot, mushrooms, green onions, egg, tamari, oyster sauce, ginger, garlic, sesame oil, salt, and pepper. Mix until the filling looks evenly combined and slightly sticky.

In a small bowl, whisk together the tamari, rice vinegar, honey, sesame oil, ginger, chili garlic oil, sliced green onion, and sesame seeds. Set aside while you wrap the dumplings.

Fill a shallow dish with room temperature water. Dip one wrapper for 5-8 seconds, then place it on a damp cutting board. It should still feel a little firm because it will continue to soften.

Spoon about 2 tablespoons of filling into the center of the wrapper. Fold the bottom over the filling, fold the top down, then fold in both sides to form a square parcel.

Dip a second wrapper for 5-8 seconds and place the folded dumpling seam-side down in the center. Fold again the same way to seal the dumpling in a sturdier second layer.

Preheat the air fryer to 375°F (190°C). Spray the basket and both sides of the dumplings with oil. Air fry in a single layer for 14-16 minutes, flipping halfway, until crisp and the center reaches 165°F (74°C).
