Crispy Easy Pizza Quesadilla (Print Version)

A 10-minute skillet pizza quesadilla with crisp pepperoni, melted mozzarella, oregano, and a golden folded tortilla.

# Ingredients:

For one quesadilla

01 - 1 large 10-inch flour tortilla, about 70 g
02 - 12-15 thin pepperoni slices, about 1 oz (28 g)
03 - 1 cup (110 g) shredded low-moisture mozzarella cheese, divided
04 - 1/4 teaspoon dried oregano
05 - 1/4 teaspoon red pepper flakes, optional
06 - Olive oil spray or 1/2 teaspoon olive oil

For serving

07 - 1/4 cup (60 ml) warm pizza sauce or marinara, for dipping
08 - 1 tablespoon grated parmesan, optional
09 - Fresh basil or parsley, optional

# Instructions:

01 - Place a 10 to 12-inch nonstick skillet over medium heat. Lightly coat it with olive oil spray or a very thin film of olive oil.
02 - Arrange the pepperoni slices in a single layer in the skillet. Sprinkle 1/2 cup mozzarella over the pepperoni and cook for about 45 seconds, until the cheese starts to melt and bubble.
03 - Lay the tortilla over the melted cheese and press gently with a spatula. Rotate the tortilla slightly so the cheese sticks to the underside.
04 - Carefully flip the tortilla so the pepperoni and crisp cheese side faces up. Sprinkle oregano and red pepper flakes over the surface.
05 - Scatter the remaining 1/2 cup mozzarella over one half of the tortilla. Add parmesan if using, then fold the empty half over the cheese.
06 - Cook for 1-2 minutes per side, pressing gently, until the tortilla is golden and the cheese is fully melted. Lower the heat if it browns too quickly.
07 - Rest for 1 minute on a cutting board. Slice into wedges and serve hot with warm pizza sauce or marinara for dipping.
