Crockpot Creamy Potato & Hamburger Soup Recipe (Print Version)

A cozy slow cooker hamburger potato soup with tender potatoes, ground beef, mixed vegetables, and a smooth cheesy finish.

# Ingredients:

For the beef base

01 - 1 1/2 lb (680 g) lean ground beef
02 - 1 medium yellow onion, diced
03 - 2 cloves garlic, minced
04 - 1 teaspoon kosher salt, plus more to taste
05 - 1/2 teaspoon black pepper
06 - 1 teaspoon Worcestershire sauce, optional

For the soup

07 - 6 cups (about 900 g) peeled diced potatoes, cut into 1/2-inch cubes
08 - 2 cups (280 g) frozen mixed vegetables
09 - 6 cups (1.4 L) low-sodium chicken broth
10 - 2 teaspoons dried parsley
11 - 1 teaspoon dried basil
12 - 1/2 teaspoon smoked paprika

For the creamy finish

13 - 1 1/2 cups (360 ml) whole milk, cold
14 - 2 tablespoons cornstarch
15 - 8 oz (225 g) Velveeta or deli American cheese, cubed
16 - Chopped green onions or parsley, for serving

# Instructions:

01 - Cook the ground beef and onion in a large skillet over medium-high heat for 7-9 minutes, breaking the beef into small crumbles, until no pink remains. Drain excess fat.
02 - Stir in the garlic, salt, pepper, and Worcestershire sauce if using. Cook for 30 seconds, just until fragrant.
03 - Transfer the beef mixture to a 6-quart slow cooker. Add the potatoes, frozen vegetables, broth, parsley, basil, and smoked paprika. Stir well.
04 - Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are fork-tender.
05 - Whisk the cold milk and cornstarch in a small bowl until smooth. Stir the mixture into the hot soup, cover, and cook for 15-20 minutes until slightly thickened.
06 - Add the cubed cheese and stir until melted and smooth. Taste and adjust salt and pepper before serving.
07 - Ladle into bowls and top with green onions, parsley, extra cheese, or crisp bacon if desired.
