# Ingredients:

For the chicken

01 - 1 1/2 lb (680 g) boneless, skinless chicken thighs
02 - 1/2 teaspoon kosher salt
03 - 1/4 teaspoon black pepper
04 - 3 tablespoons cornstarch
05 - 2 tablespoons neutral cooking oil

For the honey ginger glaze

06 - 1/3 cup (110 g) honey
07 - 1/4 cup (60 ml) low-sodium soy sauce
08 - 2 tablespoons mirin
09 - 1 tablespoon rice vinegar
10 - 1 teaspoon toasted sesame oil
11 - 1 tablespoon fresh ginger, finely grated
12 - 3 cloves garlic, minced
13 - 2 tablespoons water
14 - 1/2 teaspoon chili flakes or 1 teaspoon sriracha, optional

For serving

15 - 3 cups cooked jasmine rice or short-grain rice
16 - 2 cups steamed broccoli, snap peas, or mixed quick vegetables
17 - 2 green onions, thinly sliced
18 - 1 tablespoon sesame seeds

# Instructions:

01 - In a small bowl, whisk honey, soy sauce, mirin, rice vinegar, sesame oil, ginger, garlic, water, and chili flakes if using. Set it near the stove.
02 - Pat the chicken thighs dry. Season both sides with salt and pepper, then toss with cornstarch until lightly coated. Shake off any heavy patches.
03 - Heat oil in a large skillet over medium-high heat. Add chicken in a single layer and cook 4-5 minutes per side until golden and nearly cooked through.
04 - Lower heat to medium. Pour the glaze into the skillet and simmer 3-4 minutes, spooning it over the chicken, until glossy and the chicken reaches 165 F.
05 - Transfer chicken to a cutting board for 2 minutes. Slice into strips and spoon any thickened glaze from the pan over the top.
06 - Divide warm rice and vegetables among 4 bowls. Top with sliced chicken, extra glaze, green onions, and sesame seeds. Serve right away.
