Easy High-Protein Meal in One Pan (Print Version)

Silken tofu, eggs, and shrimp steam together in one covered pan for a quick high-protein meal with chili garlic sauce and scallions.

# Ingredients:

For the skillet

01 - 1 tablespoon neutral oil or sesame oil
02 - 11 oz (312 g) silken tofu or soon tofu
03 - 3 large eggs, beaten
04 - 8 oz (225 g) peeled and deveined shrimp
05 - 1/4 teaspoon fine salt
06 - 1/8 teaspoon black pepper

For finishing

07 - 1 1/2 tablespoons liquid seasoning or soy sauce
08 - 1-2 tablespoons chili garlic sauce, to taste
09 - 2 green onions, thinly sliced
10 - 2 cups cooked hot rice, for serving

# Instructions:

01 - Set a 10-inch nonstick skillet over medium heat. Add the oil and swirl to coat the bottom.
02 - Slide the silken tofu into the skillet in large chunks. Leave the pieces mostly intact so the finished dish has soft custardy pockets.
03 - Beat the eggs with salt and pepper. Pour them around and over the tofu without stirring too much.
04 - Place the shrimp in a single layer over the tofu and eggs so they cook evenly under the lid.
05 - Cover the skillet and reduce the heat to medium-low. Cook for 5-7 minutes, until the eggs are set and the shrimp are pink, firm, and opaque.
06 - Turn off the heat. Drizzle with liquid seasoning and chili garlic sauce, then scatter green onions over the top. Serve immediately over hot rice.

# Notes:

01 - Best eaten right after cooking while the eggs are soft and the shrimp are tender.
02 - Use tamari instead of soy sauce if you need a gluten-free seasoning option.
