Easy Slow Cooker Ground Beef Stroganoff (Print Version)

Creamy slow cooker ground beef stroganoff with mushrooms, sour cream, cream cheese, and egg noodles.

# Ingredients:

For the beef and sauce

01 - 1 1/2 lb (680 g) ground beef, 85 percent lean
02 - 1 small yellow onion, finely diced
03 - 3 cloves garlic, minced
04 - 12 oz (340 g) cremini or white mushrooms, sliced
05 - 2 1/2 cups (590 ml) beef broth
06 - 2 tablespoons Worcestershire sauce
07 - 1 teaspoon paprika
08 - 1 teaspoon onion powder
09 - 1/2 teaspoon garlic powder
10 - 1 teaspoon kosher salt, plus more to taste
11 - 1/2 teaspoon black pepper

For thickening and finishing

12 - 2 tablespoons cornstarch
13 - 2 tablespoons cold water
14 - 6 oz (170 g) cream cheese, cut into cubes
15 - 3/4 cup (180 g) sour cream
16 - 12 oz (340 g) wide egg noodles, cooked separately
17 - 2 tablespoons chopped fresh parsley, optional

# Instructions:

01 - Cook the ground beef in a large skillet over medium-high heat for 6-8 minutes, breaking it into small crumbles, until browned and cooked through. Drain excess fat.
02 - Add the diced onion to the skillet and cook for 2 minutes. Stir in the garlic and cook for 30 seconds, just until fragrant.
03 - Transfer the beef mixture to a 5- or 6-quart slow cooker. Add the mushrooms, beef broth, Worcestershire sauce, paprika, onion powder, garlic powder, salt, and pepper. Stir well.
04 - Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until the mushrooms are tender and the sauce tastes savory.
05 - Mix the cornstarch and cold water in a small bowl. Stir it into the slow cooker, then add the cream cheese cubes. Cover and cook for 20-30 minutes, stirring once or twice, until smooth.
06 - Turn the slow cooker to warm or off. Stir in the sour cream until the sauce is creamy. Taste and adjust salt and pepper.
07 - Spoon the stroganoff over hot cooked egg noodles or gently fold the noodles into the sauce right before serving. Garnish with parsley if using.

01 - Cook noodles separately for the best texture.
02 - Keep the lid closed during slow cooking except when stirring near the end.
03 - For thicker sauce, add 1 extra teaspoon cornstarch mixed with 1 tablespoon cold water.
