Feta Spinach Puffs (Print Version)

Flaky puff pastry cups filled with creamy spinach, feta, garlic, dill, and lemon for an easy warm appetizer.

# Ingredients:

For the filling

01 - 10 oz (283 g) frozen chopped spinach, thawed and squeezed very dry
02 - 4 oz (113 g) cream cheese, softened
03 - 1 large egg
04 - 2 cloves garlic, finely minced
05 - 1 tablespoon chopped fresh dill, or 1 teaspoon dried dill
06 - 1 teaspoon finely grated lemon zest
07 - 2 scallions, thinly sliced
08 - 6 oz (170 g) feta cheese, crumbled
09 - 1/4 teaspoon black pepper
10 - 1/8 teaspoon ground nutmeg, optional

For the pastry

11 - 1 package (17.3 oz / 490 g) frozen puff pastry, 2 sheets, thawed in the refrigerator
12 - All-purpose flour, for dusting
13 - Cooking spray or softened butter, for the muffin tin
14 - 1 large egg beaten with 1 teaspoon water, for egg wash
15 - 1 tablespoon sesame seeds, optional

# Instructions:

01 - Preheat the oven to 400°F (200°C). Grease an 18-cup portion of two muffin tins, or bake in batches if you have one tin.
02 - Wrap the thawed spinach in a clean kitchen towel and squeeze hard until very little liquid comes out. Loosen the spinach with your fingers.
03 - In a bowl, stir the cream cheese, 1 egg, garlic, dill, lemon zest, scallions, pepper, and nutmeg until mostly smooth. Fold in the spinach and feta until evenly combined.
04 - Lightly flour the counter. Unfold each puff pastry sheet, roll just enough to smooth the creases, and cut each sheet into 9 squares.
05 - Press each pastry square into a greased muffin cup. Add about 1 heaping tablespoon of filling to each, then fold the corners toward the center and pinch lightly.
06 - Chill the assembled puffs for 15 minutes. Brush the tops with egg wash and sprinkle with sesame seeds if using.
07 - Bake for 20-25 minutes, until the pastry is puffed and deep golden brown. Cool in the tin for 5 minutes, then move to a rack and serve warm.

# Notes:

01 - Best served warm, but still good at room temperature.
02 - Freeze unbaked puffs for up to 2 months and bake from frozen.
03 - If using fresh spinach, cook and squeeze it dry before mixing.
