29 - 1/2 cup (120 ml) water
30 - 1/2 cup (120 ml) rice vinegar
31 - 1/2 cup (100 g) granulated sugar
32 - 2 garlic cloves, minced
33 - 1-2 tablespoons red chili flakes or finely minced red chile
34 - 1/2 teaspoon kosher salt
35 - 1 tablespoon cornstarch
36 - 2 tablespoons cold water, for slurry

# Instructions:

01 - Place three small mixing bowls and one small saucepan on the counter. Gather all ingredients so the sauces come together quickly.
02 - Whisk soy sauce, rice vinegar, chili crisp, sesame oil, sugar, garlic, and ginger until the sugar dissolves. Stir in green onion and sesame seeds, then rest for 5-10 minutes.
03 - Whisk peanut butter, hoisin, soy sauce, rice vinegar, honey, sesame oil, and chili garlic sauce. Slowly whisk in warm water until smooth and pourable, then top with crushed peanuts.
04 - Whisk cooled melted butter with mayonnaise, ketchup, rice vinegar, sriracha, sugar, paprika, garlic powder, and onion powder. Thin with water until it reaches a dipping consistency.
05 - Combine water, rice vinegar, sugar, garlic, chili, and salt in a small saucepan. Bring to a gentle boil over medium heat and stir until the sugar dissolves.
06 - Whisk cornstarch with cold water in a small bowl. Pour the slurry into the simmering sauce while stirring and cook for 1-2 minutes, until glossy and lightly thickened.
