Fresh, Zesty, and Perfect for Cinco de Mayo Cowboy Caviar (Print Version)

A colorful cowboy caviar dip with beans, corn, peppers, tomatoes, avocado, cilantro, and a tangy lime vinaigrette.

# Ingredients:

For the dip

01 - 1 (15 oz / 425 g) can black beans, drained and rinsed
02 - 1 (15 oz / 425 g) can black-eyed peas, drained and rinsed
03 - 1 1/2 cups (240 g) corn kernels, fresh, canned and drained, or thawed frozen
04 - 1 red bell pepper, finely diced
05 - 1 orange bell pepper, finely diced
06 - 1 cup (150 g) cherry tomatoes, quartered
07 - 1/2 cup (75 g) finely diced red onion
08 - 1 jalapeno, seeded and minced
09 - 1/2 cup (15 g) chopped fresh cilantro, plus more for garnish
10 - 2 medium avocados, diced just before serving
11 - Tortilla chips, for serving

For the dressing

12 - 1/4 cup (60 ml) extra-virgin olive oil
13 - 3 tablespoons fresh lime juice
14 - 2 tablespoons red wine vinegar
15 - 1 tablespoon honey, maple syrup, or agave
16 - 1 garlic clove, finely grated
17 - 1 teaspoon ground cumin
18 - 1/2 teaspoon chili powder
19 - 3/4 teaspoon fine salt, plus more to taste
20 - 1/4 teaspoon black pepper

# Instructions:

01 - Drain the black beans and black-eyed peas in a colander. Rinse well under cool water, then shake off as much water as possible.
02 - Dice the bell peppers, tomatoes, red onion, and jalapeno into small pieces close to the size of the beans. Chop the cilantro.
03 - In a large bowl, whisk the olive oil, lime juice, red wine vinegar, honey, garlic, cumin, chili powder, salt, and pepper until smooth.
04 - Add the beans, corn, peppers, tomatoes, red onion, jalapeno, and cilantro to the dressing. Toss until everything is evenly coated.
05 - Cover and refrigerate for at least 30 minutes and up to 24 hours so the flavors can settle. Stir once before serving.
06 - Fold in the diced avocado just before serving. Taste and add more lime juice or salt if needed, then garnish with cilantro and serve with tortilla chips.
