# Ingredients:

For the skillet

01 - 6 slices bacon, chopped into 1/2-inch pieces
02 - 1 tablespoon olive oil
03 - 1 medium yellow onion, thinly sliced
04 - 3 cloves garlic, minced
05 - 1 large green cabbage, about 2 1/2 lb (1.1 kg), cored and sliced
06 - 1/2 teaspoon garlic powder
07 - 1/2 teaspoon smoked paprika
08 - 3/4 teaspoon kosher salt, plus more to taste
09 - 1/2 teaspoon black pepper
10 - 1-2 teaspoons apple cider vinegar
11 - 2 tablespoons chopped fresh parsley, optional

# Instructions:

01 - Place the chopped bacon in a cold 12-inch skillet. Cook over medium heat for 8-10 minutes, stirring often, until crisp. Transfer the bacon to a paper towel-lined plate and leave about 1 tablespoon drippings in the pan.
02 - Add the olive oil and onion to the skillet. Cook for 4-5 minutes, stirring often, until the onion softens and starts to turn golden at the edges.
03 - Stir in the fresh garlic and cook for 30 seconds, just until fragrant. Do not let it brown.
04 - Add the sliced cabbage, garlic powder, smoked paprika, salt, and pepper. Toss well, then cook uncovered for 10-14 minutes, stirring every couple of minutes, until tender and lightly browned.
05 - Stir in the apple cider vinegar and reserved bacon. Taste and adjust seasoning. Sprinkle with parsley if using and serve hot.

01 - Use a wide skillet so the cabbage browns instead of steaming.
02 - For softer cabbage, cover the skillet for the last few minutes, then uncover to cook off moisture.
