Garlic Chili Oil Noodles (Print Version)

Chewy garlic chili oil noodles tossed in a sizzling soy-vinegar sauce, topped with cucumber, sesame, green onion, and a crispy fried egg.

# Ingredients:

For the noodles and sauce

01 - 8 oz (225 g) knife-cut wheat noodles or wide wheat noodles
02 - 5 cloves garlic, very finely minced
03 - 2 teaspoons chili flakes, Sichuan flakes or gochugaru
04 - 2 green onions, thinly sliced, whites and greens separated
05 - 3 tablespoons soy sauce
06 - 1 tablespoon rice vinegar or Chinese black vinegar
07 - 1 teaspoon toasted sesame oil
08 - 1 teaspoon sugar
09 - 1 tablespoon garlic chili oil, plus more to serve
10 - 3 tablespoons neutral oil, such as avocado, peanut, canola, or grapeseed oil

For serving

11 - 2 large eggs
12 - 1 teaspoon neutral oil, for frying eggs
13 - 1/2 English cucumber, thinly sliced or julienned
14 - 1 tablespoon toasted sesame seeds
15 - Extra sliced green onions, optional

# Instructions:

01 - Bring a pot of water to a boil. Cook the noodles according to package directions until chewy and just tender. Drain well and do not rinse.
02 - In a large heat-safe bowl, combine the garlic, chili flakes, green onion whites, soy sauce, rice vinegar, sesame oil, sugar, and garlic chili oil.
03 - Heat 3 tablespoons neutral oil in a small saucepan over medium-high heat until shimmering, about 350F if using a thermometer. Carefully pour it over the garlic mixture and stir until fragrant and the sugar dissolves.
04 - Add the hot drained noodles to the bowl. Toss for 1-2 minutes until the noodles are evenly coated and glossy.
05 - Heat 1 teaspoon neutral oil in a skillet over medium heat. Fry the eggs until the whites are set and the edges are crisp, 2-4 minutes depending on yolk preference.
06 - Divide the noodles between 2 bowls. Top with fried eggs, cucumber, sesame seeds, green onion tops, and extra garlic chili oil if desired.

01 - Best served immediately while the noodles are hot and glossy.
02 - Use a heat-safe bowl for the hot oil step.
03 - For a vegan version, omit the egg and add tofu or edamame.
