Garlic Parmesan Roasted Shrimp (Print Version)

Juicy oven-roasted shrimp coated with garlic, Parmesan, lemon, and herbs for a fast dinner or appetizer.

# Ingredients:

For the shrimp

01 - 1 1/2 lb (680 g) large shrimp, peeled and deveined
02 - 2 tablespoons olive oil
03 - 2 tablespoons unsalted butter, melted
04 - 4 cloves garlic, finely minced
05 - 1 teaspoon finely grated lemon zest
06 - 1 teaspoon Italian seasoning
07 - 1/4 teaspoon red pepper flakes, optional
08 - 3/4 teaspoon kosher salt
09 - 1/4 teaspoon black pepper
10 - 1/2 cup (45 g) freshly grated Parmesan cheese

For finishing

11 - 1 tablespoon fresh lemon juice, plus lemon wedges for serving
12 - 2 tablespoons chopped fresh parsley

# Instructions:

01 - Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper or lightly oil it.
02 - Pat the shrimp very dry with paper towels, then place them in a large mixing bowl.
03 - Add olive oil, melted butter, garlic, lemon zest, Italian seasoning, red pepper flakes, salt, and black pepper. Toss until the shrimp are evenly coated.
04 - Sprinkle the Parmesan over the shrimp and toss again so the cheese clings in a thin, even layer.
05 - Spread the shrimp in a single layer on the prepared sheet pan. Roast for 7-9 minutes, until pink, opaque, and lightly browned at the edges.
06 - Squeeze lemon juice over the hot shrimp and sprinkle with parsley. Serve immediately with extra lemon wedges.

# Notes:

01 - Best served hot, straight from the sheet pan.
02 - Use large or jumbo shrimp for the juiciest texture.
03 - Nutrition is an estimate per serving.
