Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment if desired.

Toast the macadamia nuts in a dry skillet over medium heat for 3-4 minutes, stirring often, until fragrant. Cool slightly and chop coarse.

In a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt until evenly combined.

In a second bowl, mash the bananas. Stir in the crushed pineapple, eggs, oil, and vanilla until well blended.

Add the dry ingredients to the wet ingredients and fold gently until almost combined. Fold in the coconut and toasted macadamia nuts just until no dry flour remains.

Spread the batter in the prepared pan and sprinkle with extra nuts if using. Bake for 55-65 minutes, until the top is golden and a tester inserted in the center comes out with moist crumbs.

Cool in the pan for 15 minutes, then transfer to a rack. Let the bread cool at least 45 minutes before slicing for the cleanest crumb.
