Homemade Thousand Island Dressing (Print Version)

Creamy homemade Thousand Island dressing with relish, onion, paprika, and a bright vinegar snap, ready in 10 minutes.

# Ingredients:

For the dressing

01 - 1 cup (240 g) mayonnaise
02 - 1/4 cup (65 g) ketchup
03 - 3 tablespoons sweet pickle relish, lightly drained if very wet
04 - 1 tablespoon finely grated yellow or white onion
05 - 1 tablespoon white vinegar
06 - 1 teaspoon fresh lemon juice
07 - 1 teaspoon granulated sugar
08 - 1/2 teaspoon sweet paprika
09 - 1/4 teaspoon fine salt, plus more to taste
10 - 1/8 teaspoon black pepper

# Instructions:

01 - Grate or very finely mince the onion. If it is especially juicy, press it lightly with a paper towel so the dressing stays thick.
02 - In a medium bowl, whisk the mayonnaise and ketchup until smooth and evenly pink.
03 - Add the relish, onion, vinegar, lemon juice, sugar, paprika, salt, and pepper. Stir until glossy and well combined.
04 - Taste the dressing. Add a pinch more salt, a few drops of vinegar, or a tiny pinch of sugar until it tastes creamy, tangy, and balanced.
05 - Cover and refrigerate for at least 30 minutes. Stir again before drizzling, dipping, or spreading.

01 - Makes about 1 1/2 cups of dressing.
02 - Best after at least 30 minutes of chilling.
03 - Use within 5-7 days when stored covered in the refrigerator.
