Low Carb Bacon Cheeseburger Casserole (Print Version)

A hearty low carb bacon cheeseburger casserole with beef, bacon, cheddar, pickles, and a creamy baked filling.

# Ingredients:

For the beef and bacon

01 - 6 slices bacon, chopped
02 - 1 1/2 lb (680 g) ground beef, 85 percent lean
03 - 1/2 cup (75 g) finely diced yellow onion
04 - 3 cloves garlic, minced
05 - 1 teaspoon kosher salt
06 - 1/2 teaspoon black pepper
07 - 1 teaspoon smoked paprika
08 - 1/2 teaspoon onion powder
09 - 3 oz (85 g) cream cheese, softened
10 - 1 tablespoon yellow mustard
11 - 2 tablespoons sugar-free ketchup
12 - 1 teaspoon gluten-free Worcestershire sauce

For the topping and finish

13 - 3 large eggs
14 - 1/2 cup (120 ml) heavy cream
15 - 1 1/2 cups (170 g) shredded cheddar cheese
16 - 1/4 cup (35 g) chopped dill pickles, for topping
17 - 2 tablespoons sliced scallions, for topping

# Instructions:

01 - Preheat the oven to 350 degrees F. Grease a 9-inch square baking dish or a similar 2-quart casserole dish.
02 - Cook the chopped bacon in a large skillet over medium heat until crisp, 6-8 minutes. Transfer to a paper towel lined plate and leave about 1 tablespoon of drippings in the skillet.
03 - Add the ground beef, onion, garlic, salt, pepper, smoked paprika, and onion powder. Cook over medium-high heat until the beef is browned and no longer pink, 7-9 minutes. Drain excess grease if needed.
04 - Lower the heat. Stir in the cream cheese, mustard, sugar-free ketchup, and Worcestershire sauce until the cream cheese melts and coats the beef.
05 - Spread the beef mixture in the prepared baking dish. Scatter about three-quarters of the bacon over the beef.
06 - Whisk the eggs and heavy cream in a bowl until smooth. Pour over the beef, then top with cheddar cheese and the remaining bacon.
07 - Bake for 25-30 minutes, until the center is set and the top is golden. Rest for 10 minutes, then top with chopped pickles and scallions before serving.
