Moist Peanut Butter Chocolate Chip Banana Bread (Print Version)

# Ingredients:

For the loaf

01 - 3 very ripe medium bananas, mashed, about 1 1/4 cups (300 g)
02 - 1/2 cup (128 g) creamy peanut butter
03 - 1/3 cup (76 g) unsalted butter, melted and slightly cooled
04 - 3/4 cup (160 g) packed light brown sugar
05 - 2 large eggs, room temperature
06 - 1/3 cup (80 g) sour cream or plain Greek yogurt
07 - 1 teaspoon vanilla extract
08 - 1 1/2 cups (190 g) all-purpose flour
09 - 1 teaspoon baking soda
10 - 1/2 teaspoon fine salt
11 - 1/2 teaspoon ground cinnamon
12 - 3/4 cup (128 g) semi-sweet chocolate chips, divided

Optional topping

13 - 2 tablespoons creamy peanut butter, warmed for drizzling
14 - 1 tablespoon chopped peanuts

# Instructions:

01 - Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper, leaving overhang on the long sides.
02 - Mash the bananas in a large bowl until mostly smooth with a few small lumps remaining.
03 - Whisk in the peanut butter, melted butter, brown sugar, eggs, sour cream, and vanilla until thick and combined.
04 - Sprinkle in the flour, baking soda, salt, and cinnamon. Fold gently with a spatula just until no dry streaks remain.
05 - Fold in most of the chocolate chips, saving 2 tablespoons for the top. Spread the batter into the prepared pan.
06 - Sprinkle the remaining chocolate chips over the batter. Add a light peanut butter drizzle and chopped peanuts if using. Bake for 55-65 minutes, until a toothpick inserted in the center comes out with moist crumbs and no wet batter.
07 - Cool in the pan for 15 minutes, then lift the loaf onto a rack. Cool at least 45 minutes more before slicing.

01 - Use bananas that are heavily spotted or mostly brown for the best flavor.
02 - If the top browns too fast, loosely tent the loaf with foil for the final 15 minutes.
