No Bake Chocolate Oat Bars (Print Version)

Chewy no bake chocolate oat bars with buttery oats, creamy peanut butter, and a rich chocolate layer that sets in the fridge.

# Ingredients:

For the oat layers

01 - 3/4 cup (170 g) unsalted butter
02 - 1/2 cup (105 g) packed light brown sugar
03 - 1/4 teaspoon fine salt
04 - 1 teaspoon vanilla extract
05 - 3 cups (270 g) quick cooking oats

For the chocolate layer

06 - 1 cup (170 g) semisweet chocolate chips
07 - 3/4 cup (190 g) creamy peanut butter
08 - Flaky salt, optional

# Instructions:

01 - Line an 8-inch square pan with parchment paper, leaving overhang on two sides for easy lifting.
02 - Combine chocolate chips and peanut butter in a small saucepan over low heat. Stir until smooth and glossy, then reserve 2 tablespoons for drizzling.
03 - Melt butter in a large saucepan over medium-low heat. Stir in brown sugar and salt until combined, then add vanilla and oats. Cook on low for 2 minutes, stirring constantly.
04 - Transfer half of the warm oat mixture to the prepared pan. Press firmly into an even layer with a greased spatula or the bottom of a measuring cup.
05 - Spread the chocolate peanut butter mixture over the oat base in an even layer.
06 - Crumble the remaining oat mixture over the chocolate and press lightly. Drizzle with the reserved chocolate and sprinkle with flaky salt if using. Chill for at least 2 hours, then rest 10 minutes before slicing.

# Notes:

01 - Chilling time is at least 2 hours and is not included in cook time.
02 - Let the bars stand briefly before slicing to reduce cracking.
03 - Store airtight in the refrigerator for up to 1 week or freeze for up to 2 months.
