One-Pan Lemon Turmeric Chicken & Rice (Print Version)

Golden chicken thighs and lemony turmeric rice cook together in one covered skillet for a cozy, low-cleanup dinner.

# Ingredients:

For the chicken

01 - 4 bone-in, skin-on chicken thighs, about 2 lb (900 g)
02 - 1 1/4 teaspoons kosher salt, divided
03 - 1/2 teaspoon black pepper
04 - 1/2 teaspoon garlic powder
05 - 1/2 teaspoon onion powder
06 - 2 tablespoons olive oil

For the rice

07 - 1 small yellow onion, finely diced
08 - 4 cloves garlic, minced
09 - 1 1/2 teaspoons ground turmeric, divided
10 - 1 teaspoon Italian seasoning
11 - 1 1/2 cups (285 g) long-grain white rice, rinsed and well drained
12 - 2 1/2 cups (600 ml) low-sodium chicken broth
13 - Zest of 1 lemon
14 - 3 tablespoons fresh lemon juice
15 - 2 tablespoons chopped fresh parsley
16 - Lemon slices, for serving

# Instructions:

01 - Pat the chicken thighs very dry. Season with 3/4 teaspoon salt, pepper, garlic powder, onion powder, and 1/2 teaspoon turmeric.
02 - Heat olive oil in a 12-inch deep skillet over medium heat. Add chicken skin-side down and cook for 7-8 minutes until deeply golden. Flip and cook for 3 minutes, then transfer to a plate.
03 - Pour off excess fat if there is more than 2 tablespoons in the pan. Add the onion and cook for 3-4 minutes until softened, scraping up browned bits.
04 - Stir in garlic, remaining 1 teaspoon turmeric, Italian seasoning, and remaining 1/2 teaspoon salt. Cook for 30 seconds until fragrant.
05 - Add the rinsed and drained rice. Stir for 1 minute until the grains are glossy and evenly coated with the yellow spices.
06 - Pour in chicken broth, lemon zest, and lemon juice. Bring to a simmer, then nestle the chicken back on top skin-side up. Cover, reduce heat to low, and cook for 20-24 minutes until the rice is tender and the chicken reaches 165°F.
07 - Turn off the heat and let the covered skillet rest for 10 minutes. Fluff the rice around the chicken, sprinkle with parsley, and serve with lemon slices.
