Orange Dreamsicle Salad, 1st Recipes Style (Print Version)

A cool, creamy orange dessert salad with vanilla pudding, whipped topping, mandarin oranges, and soft mini marshmallows.

# Ingredients:

For the orange vanilla base

01 - 1 package (3 oz or 85 g) orange gelatin
02 - 1 cup (240 ml) boiling water
03 - 1/2 cup (120 ml) cold water
04 - 1 package (3.4 oz or 96 g) instant vanilla pudding mix
05 - 1 teaspoon vanilla extract
06 - 1 container (8 oz or 225 g) frozen whipped topping, thawed

For the fruit and fluff

07 - 2 cans (11 oz each or 312 g each) mandarin oranges, well drained
08 - 2 cups (100 g) mini marshmallows
09 - Extra mandarin orange segments for garnish, optional

# Instructions:

01 - Add the orange gelatin to a large heat-safe bowl. Pour in the boiling water and whisk for 1-2 minutes, until the gelatin is fully dissolved.
02 - Stir in the cold water. Refrigerate for 15-20 minutes, until the mixture is cool and slightly syrupy but not set.
03 - Sprinkle the dry instant vanilla pudding mix over the chilled gelatin base. Whisk until smooth and creamy with no dry pockets.
04 - Return the bowl to the refrigerator for 15-20 minutes, until the base thickens slightly and can hold soft folds.
05 - Add the thawed whipped topping and vanilla extract. Fold gently with a spatula until the mixture is evenly pale orange and fluffy.
06 - Fold in the well-drained mandarin oranges and mini marshmallows. Work gently so the orange segments do not break apart too much.
07 - Cover and refrigerate for at least 3 hours. Serve cold, garnished with extra mandarin orange segments if desired.

# Notes:

01 - Plan for at least 3 hours of chilling after mixing.
02 - Best served cold within 24 hours for the fluffiest texture.
03 - Drain mandarins very well to prevent a watery salad.
