Peach Strawberry Lemonade (Print Version)

Fresh Peach Strawberry Lemonade made with blended fruit, real lemon juice, and a light simple syrup for a bright summer pitcher drink.

# Ingredients:

For the fruit base

01 - 4 ripe peaches, about 1 1/2 lb (680 g), pitted and sliced
02 - 2 cups (300 g) fresh strawberries, hulled
03 - 1 cup (240 ml) cold water

For the syrup and lemonade

04 - 1/3 cup (65 g) granulated sugar
05 - 1/3 cup (80 ml) water
06 - 1 1/4 cups (300 ml) fresh lemon juice, from about 6-8 lemons
07 - 5-6 cups (1.2-1.4 L) cold water, to taste
08 - 2 cups ice, plus more for serving

For garnish

09 - 1 peach, thinly sliced
10 - 1/2 cup (75 g) sliced strawberries
11 - 1 lemon, sliced into wheels
12 - Fresh mint sprigs

# Instructions:

01 - Combine the sugar and 1/3 cup water in a small saucepan. Warm over medium heat for 3-5 minutes, stirring until the sugar fully dissolves. Remove from the heat and cool.
02 - Rinse the peaches, strawberries, and lemons under cool running water. Pit and slice the peaches, hull the strawberries, and juice the lemons.
03 - Add the peaches, strawberries, and 1 cup cold water to a blender. Blend until very smooth, about 45-60 seconds.
04 - For a smoother lemonade, pour the fruit puree through a fine mesh sieve into a large pitcher, pressing with a spoon. For a pulpy lemonade, add the puree straight to the pitcher.
05 - Stir in the fresh lemon juice, cooled syrup, and 5 cups cold water. Taste, then add up to 1 more cup water if you want it lighter.
06 - Refrigerate for at least 30 minutes. Serve over ice with peach slices, strawberries, lemon wheels, and mint.

# Notes:

01 - Makes about 8 cups, depending on how much water you add.
02 - Best served very cold within 2 days.
03 - For sparkling lemonade, replace part of the cold water with sparkling water just before serving.
