Peaches and Cream Cheese Loaf, 1st Recipes Style (Print Version)

A tender peaches and cream cheese loaf with juicy peach pieces, lemon zest, and a rich crumb that slices cleanly once cooled.

# Ingredients:

For the loaf

01 - 8 oz (225 g) cream cheese, softened
02 - 1/2 cup (113 g) unsalted butter, softened
03 - 1 1/4 cups (250 g) granulated sugar
04 - 2 large eggs, room temperature
05 - 2 teaspoons finely grated lemon zest
06 - 1 teaspoon vanilla extract
07 - 2 1/4 cups (270 g) all-purpose flour, plus 1 tablespoon for peaches
08 - 1 tablespoon baking powder
09 - 3/4 teaspoon fine salt
10 - 1 teaspoon ground cinnamon, optional
11 - 3/4 cup (180 ml) whole milk, room temperature
12 - 1 1/2 cups (250 g) drained diced peaches, canned or fresh, patted dry

Optional glaze

13 - 3/4 cup (85 g) powdered sugar
14 - 1-2 tablespoons milk or lemon juice

# Instructions:

01 - Heat the oven to 350°F. Grease a 9x5-inch loaf pan and line it with parchment paper, leaving overhang on two sides.
02 - Beat the cream cheese, butter, and sugar in a large bowl until smooth and slightly fluffy, about 2-3 minutes. Scrape the bowl well.
03 - Beat in the eggs one at a time. Mix in the lemon zest and vanilla until the batter is creamy.
04 - In a separate bowl, whisk 2 1/4 cups flour with the baking powder, salt, and cinnamon if using.
05 - Add half the dry mixture to the cream cheese mixture, then add the milk, then the remaining dry mixture. Mix just until combined.
06 - Toss the diced peaches with 1 tablespoon flour. Fold them gently into the batter with a spatula.
07 - Spread the batter into the pan and smooth the top. Bake for 60-70 minutes, tenting with foil after 45 minutes if needed, until a tester comes out with moist crumbs.
08 - Cool in the pan for 20 minutes, then lift onto a rack and cool completely. If glazing, whisk powdered sugar with milk or lemon juice and drizzle over the cooled loaf.

# Notes:

01 - Use canned, fresh, or thawed frozen peaches as long as they are well drained.
02 - The loaf slices best after cooling completely.
03 - Tent with foil if the top browns before the center is baked.
