This Pineapple Coconut Smoothie Is Creamy and Refreshing (Print Version)

A creamy pineapple coconut smoothie made with frozen pineapple, coconut milk, coconut water, lime, and ice for a quick tropical refresher.

# Ingredients:

For the smoothie

01 - 1 1/2 cups (240 g) frozen pineapple chunks
02 - 1/2 cup (120 ml) full-fat coconut milk, shaken
03 - 1/2 cup (120 ml) coconut water
04 - 1 tablespoon fresh lime juice
05 - 1-2 teaspoons maple syrup, optional
06 - 1 cup (140 g) ice cubes

For serving

07 - Fresh mint sprigs, optional
08 - 2 small pineapple wedges, optional

# Instructions:

01 - Pour the coconut milk, coconut water, lime juice, and 1 teaspoon maple syrup into a blender.
02 - Add the frozen pineapple and ice cubes on top of the liquids.
03 - Blend on low for 10 seconds, then increase to high and blend for 30-45 seconds, until thick, creamy, and free of pineapple chunks.
04 - Taste the smoothie. Add more lime for brightness, more maple syrup for sweetness, or 1-2 tablespoons coconut water if it is too thick.
05 - Pour into 2 chilled glasses and garnish with mint or pineapple wedges if using. Serve right away.

# Notes:

01 - Best served immediately while thick and frosty.
02 - Use full-fat canned coconut milk for the creamiest texture.
03 - For a lighter smoothie, use light coconut milk and reduce the ice slightly.
