Pineapple Lemonade, 1st Recipes Style (Print Version)

A cold, fizzy pineapple lemonade punch made with lemonade mix, pineapple juice, lemon-lime soda, and fresh slices of lemon.

# Ingredients:

For the lemonade base

01 - 1 cup lemonade drink mix, Country Time style or similar
02 - 3 cups cold water
03 - 1 can (46 oz / 1.36 L) pineapple juice, well chilled
04 - 1 tablespoon fresh lemon juice, optional, to taste

For fizz and garnish

05 - 1 liter lemon-lime soda or ginger ale, well chilled
06 - 1 lemon, thinly sliced
07 - 1 cup fresh pineapple chunks, optional
08 - Fresh mint sprigs, optional
09 - Ice, for serving

# Instructions:

01 - Add the lemonade drink mix and cold water to a large pitcher. Whisk for 30-45 seconds, until the powder is fully dissolved and no gritty mix remains on the bottom.
02 - Pour in the chilled pineapple juice and stir slowly until the base is evenly mixed. Taste and add fresh lemon juice if you want a sharper finish.
03 - If the ingredients were not cold, cover the pitcher and refrigerate for at least 30 minutes. A colder base keeps the punch from tasting watered down.
04 - Right before serving, pour in the chilled lemon-lime soda or ginger ale. Stir gently 2-3 times so you keep as much fizz as possible.
05 - Add lemon slices, pineapple chunks, mint, and ice. Serve immediately in tall glasses with extra ice on the side.

# Notes:

01 - Best served very cold right after the soda is added.
02 - For a less sweet pitcher, replace half the soda with chilled seltzer.
03 - Make the pineapple lemonade base up to 24 hours ahead, then add soda before serving.
