Pizza Quesadilla (Print Version)

A crispy, melty pizza quesadilla with pepperoni, mozzarella, oregano, and pizza sauce, ready in about 10 minutes.

# Ingredients:

For one pizza quesadilla

01 - 1 large 10-inch flour tortilla
02 - 12 thin pepperoni slices, about 1 oz (28 g)
03 - 3/4 cup (85 g) shredded low-moisture mozzarella, divided
04 - 2 tablespoons thick pizza sauce, plus more for dipping
05 - 1/2 teaspoon dried oregano
06 - 1/4 teaspoon red pepper flakes, optional
07 - Olive oil spray or 1 teaspoon olive oil

# Instructions:

01 - Heat a nonstick or cast iron skillet over medium heat. Lightly coat the pan with olive oil spray or 1 teaspoon olive oil.
02 - Arrange the pepperoni slices in a single layer in the skillet. Scatter 1/4 cup of the mozzarella over the pepperoni and cook for about 30 seconds, until the cheese starts to melt.
03 - Place the tortilla over the melting cheese and pepperoni. Press gently with a spatula so the cheese sticks to the tortilla.
04 - Carefully flip the tortilla so the pepperoni side faces up. Spread pizza sauce over one half, then sprinkle with oregano and red pepper flakes.
05 - Add the remaining 1/2 cup mozzarella over the sauced half. Fold the plain half over the filling and press gently.
06 - Cook for 1-2 minutes per side, flipping as needed, until the tortilla is golden and the cheese is fully melted. Rest for 1 minute, then slice into wedges and serve with warm sauce.

# Notes:

01 - Best served hot, right after slicing.
02 - Use a thicker pizza sauce inside and save extra sauce for dipping.
03 - Cook toppings with extra moisture before adding them.
