Pizzadilla (Print Version)

A crispy skillet pizzadilla with pepperoni, mozzarella, ham, peppers, mushrooms, and pizza sauce folded inside a golden tortilla.

# Ingredients:

For the pizzadilla

01 - 1 large 10-inch flour tortilla
02 - 12 pepperoni slices
03 - 1 cup (115 g) shredded low-moisture mozzarella, divided
04 - 1/4 cup (35 g) diced cooked ham
05 - 1/4 cup (18 g) thinly sliced mushrooms
06 - 1/4 cup (35 g) diced red bell pepper
07 - 2 tablespoons pizza sauce, plus more for dipping
08 - 1/2 teaspoon dried oregano
09 - 1/4 teaspoon red pepper flakes, optional

# Instructions:

01 - Heat a large nonstick skillet over medium heat. Arrange the pepperoni in a single layer and cook for about 1 minute, just until the edges start to sizzle.
02 - Sprinkle 1/2 cup mozzarella evenly over the pepperoni. Place the tortilla on top and press gently for 20-30 seconds so the melted cheese sticks to the tortilla.
03 - Carefully flip the tortilla so the pepperoni-cheese side faces up. Scatter the ham, mushrooms, bell pepper, small dots of pizza sauce, remaining mozzarella, oregano, and red pepper flakes over one side.
04 - Fold the tortilla in half and press gently. Cook for 2-3 minutes per side, until the tortilla is golden brown and the cheese is fully melted.
05 - Move to a cutting board and rest for 1 minute. Cut into 3 or 4 wedges and serve hot with extra warm pizza sauce.

# Notes:

01 - Best served immediately while the tortilla is crisp.
02 - Keep pizza sauce light inside the tortilla to prevent sogginess.
03 - Use a 10-inch tortilla for easier folding and cleaner wedges.
