Quick Easy Beef Broccoli Noodles (Print Version)

Tender beef, crisp broccoli, and chewy noodles tossed in a glossy soy, oyster, and hoisin sauce for a fast weeknight dinner.

# Ingredients:

For the noodles and beef

01 - 8 oz (225 g) lo mein noodles, wide rice noodles, or spaghetti
02 - 12 oz (340 g) broccoli florets, cut small
03 - 1 lb (450 g) sirloin or flank steak, thinly sliced against the grain
04 - 1 teaspoon low-sodium soy sauce
05 - 1 teaspoon cornstarch
06 - 1 tablespoon neutral oil, plus more if needed
07 - 1/2 medium yellow onion, thinly sliced
08 - 3 cloves garlic, minced
09 - 1 tablespoon fresh ginger, minced or grated

For the sauce

10 - 1/3 cup (80 ml) low-sodium soy sauce
11 - 1 tablespoon dark soy sauce, or extra low-sodium soy sauce
12 - 2 tablespoons oyster sauce
13 - 1 tablespoon hoisin sauce
14 - 1 tablespoon honey or brown sugar
15 - 1 teaspoon toasted sesame oil
16 - 2 teaspoons cornstarch
17 - 3/4 cup (180 ml) low-sodium beef broth or water
18 - 1/2 teaspoon black pepper

For serving

19 - 2 green onions, thinly sliced
20 - 1 tablespoon toasted sesame seeds
21 - Chili crisp or red pepper flakes, optional

# Instructions:

01 - Cook the noodles according to package directions, stopping 1 minute before fully tender. Drain well and set aside.
02 - Bring a pot of water to a boil. Add the broccoli and cook for 1-2 minutes until bright green and crisp-tender. Drain well.
03 - Whisk low-sodium soy sauce, dark soy sauce, oyster sauce, hoisin sauce, honey, sesame oil, cornstarch, broth, and black pepper until smooth.
04 - Toss the sliced beef with 1 teaspoon soy sauce and 1 teaspoon cornstarch. Let it sit while the skillet heats.
05 - Heat neutral oil in a large skillet or wok over medium-high heat. Add the beef in a single layer and cook for 2-3 minutes until browned at the edges. Transfer to a plate.
06 - Add the onion to the same pan and cook for 1 minute. Add the garlic and ginger and stir for 30 seconds until fragrant.
07 - Return the beef to the pan with the noodles and broccoli. Whisk the sauce again, pour it in, and toss for 1-2 minutes until thick and glossy. Garnish with green onions, sesame seeds, and chili crisp if using.
