Red Curry Dumpling Soup (Print Version)

A creamy one-pot red curry dumpling soup with coconut milk, bok choy, frozen dumplings, lime, scallions, and chili crisp.

# Ingredients:

For the soup base

01 - 1 tablespoon neutral oil, such as avocado or canola oil
02 - 1/2 small yellow onion, finely diced
03 - 3 cloves garlic, minced
04 - 1 tablespoon fresh ginger, grated
05 - 2 tablespoons Thai red curry paste, plus more to taste
06 - 1 can (13.5 oz or 400 ml) full-fat coconut milk
07 - 4 cups (960 ml) chicken broth or vegetable broth
08 - 1 tablespoon soy sauce
09 - 1 teaspoon toasted sesame oil
10 - 1 teaspoon brown sugar

For the dumplings and greens

11 - 20-24 frozen dumplings or potstickers, chicken, pork, shrimp, or vegetable
12 - 3 baby bok choy, ends trimmed and leaves separated
13 - 1 tablespoon fresh lime juice, plus wedges for serving

For serving

14 - 2 green onions, thinly sliced
15 - 2 tablespoons chopped cilantro or Thai basil
16 - 1 tablespoon sesame seeds
17 - Chili crisp or chili oil, to taste

# Instructions:

01 - Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger and cook for 2 minutes, stirring often, until fragrant and softened.
02 - Add the red curry paste and stir for 45-60 seconds. The paste should darken slightly and smell more aromatic.
03 - Whisk in the coconut milk, then add the broth, soy sauce, sesame oil, and brown sugar. Bring to a gentle simmer over medium heat.
04 - Add the frozen dumplings and simmer gently for 6-8 minutes, or according to the package directions, until tender and cooked through.
05 - Stir in the bok choy and cook for 1-2 minutes, just until the leaves wilt and the stems are crisp-tender.
06 - Turn off the heat and stir in the lime juice. Ladle into bowls and top with green onions, cilantro or Thai basil, sesame seeds, and chili crisp.

01 - Use full-fat canned coconut milk for the creamiest broth.
02 - Add dumplings near the end so the wrappers stay tender.
03 - For make-ahead, prepare the broth first and cook dumplings just before serving.
