01 -
Heat the oil in a large skillet over medium heat. Add the Spam slices and cook for 2-3 minutes per side, until browned with crisp edges.
02 -
Lower the heat to medium-low. Stir the soy sauce, honey, and rice vinegar together, then pour into the skillet. Turn the Spam for 1-2 minutes, until glossy and lightly caramelized. Transfer to a plate.
03 -
In the same skillet, fry the eggs sunny side up, over easy, or over hard. Use over hard eggs if the wraps will be packed for later.
04 -
Place one nori sheet shiny side down on a clean surface. Cut one slit from the bottom edge straight to the center so the sheet has four foldable quarters.
05 -
Spread 1/2 cup warm rice on one quarter and sprinkle with furikake. Place 2 glazed Spam slices on the next quarter, 1 egg and 1 cheese slice on the third, and 2 tablespoons drained kimchi on the last.
06 -
Fold the rice quarter over the Spam, then over the egg and cheese, then over the kimchi to make a compact square. Wrap tightly in plastic wrap for 1 minute, then slice in half with a damp sharp knife. Repeat with remaining wraps.
