Spicy Garlic Beef Noodles (Print Version)

Saucy Spicy Garlic Beef Noodles with browned ground beef, chewy noodles, scallions, sesame, and a glossy chili garlic sauce.

# Ingredients:

For the noodles

01 - 10 oz (285 g) lo mein, ramen, udon, or spaghetti noodles
02 - 1 teaspoon neutral oil, for tossing noodles if needed

For the sauce

03 - 1/4 cup (60 ml) low-sodium soy sauce
04 - 2 tablespoons oyster sauce
05 - 1 1/2 tablespoons chili garlic sauce, or more to taste
06 - 1 tablespoon brown sugar
07 - 1 tablespoon rice vinegar
08 - 2 tablespoons water
09 - 1/2 teaspoon black pepper
10 - 1 teaspoon dark soy sauce, optional for deeper color

For the beef and finish

11 - 1 tablespoon neutral oil
12 - 1 lb (450 g) lean ground beef
13 - 1/2 small yellow onion, thinly sliced
14 - 5 cloves garlic, minced
15 - 1 tablespoon fresh ginger, grated
16 - 3 green onions, whites and greens separated, sliced
17 - 2 teaspoons toasted sesame oil
18 - 1 tablespoon sesame seeds
19 - Chili flakes or chili crisp, optional for serving

# Instructions:

01 - Boil the noodles according to package directions until just tender. Drain well and toss with 1 teaspoon oil if they need to sit for more than a minute or two.
02 - Whisk together the soy sauce, oyster sauce, chili garlic sauce, brown sugar, rice vinegar, water, black pepper, and dark soy sauce if using.
03 - Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add the ground beef in an even layer and cook undisturbed for 3-4 minutes, then break it up and cook until browned and no pink remains.
04 - Add the onion and scallion whites. Cook for 1 minute, then stir in the garlic and ginger and cook for 60-90 seconds until fragrant.
05 - Add the drained noodles to the pan. Pour in the sauce and toss for 1-2 minutes until the noodles are glossy, coated, and hot.
06 - Turn off the heat and stir in the toasted sesame oil. Top with scallion greens, sesame seeds, and extra chili if you want more heat.

02 - Cook ground beef to 160°F for food safety.
