# Ingredients:

For the cheesecake filling

01 - 8 oz (225 g) block cream cheese, softened
02 - 1/3 cup (40 g) powdered sugar
03 - 1 teaspoon vanilla extract
04 - 1 teaspoon finely grated lemon zest
05 - 1 teaspoon fresh lemon juice
06 - 1 cup (150 g) fresh strawberries, hulled, finely diced, and patted dry
07 - 2 tablespoons strawberry preserves
08 - 1 teaspoon cornstarch

For rolling and frying

09 - 10 eggroll wrappers
10 - 1 tablespoon cornstarch mixed with 1 tablespoon water, for sealing
11 - 4 cups (950 ml) neutral oil, or enough for 2 inches in the pan
12 - 1/4 cup (50 g) granulated sugar
13 - 1/2 teaspoon ground cinnamon
14 - Powdered sugar, for dusting
15 - Strawberry sauce or chocolate sauce, for serving, optional

# Instructions:

01 - Beat the cream cheese, powdered sugar, vanilla, lemon zest, and lemon juice until smooth. Fold in the diced strawberries, strawberry preserves, and cornstarch.
02 - Refrigerate the filling for 10 minutes so it firms slightly and is easier to roll without leaking.
03 - Place one eggroll wrapper on the counter like a diamond. Spoon 1 1/2 to 2 tablespoons filling just below the center, leaving clean edges.
04 - Fold the bottom corner over the filling, fold in the sides, and roll snugly. Brush the final corner with cornstarch paste and press to seal. Repeat with remaining wrappers.
05 - Pour oil into a deep skillet or Dutch oven to a depth of about 2 inches. Heat to 350°F over medium heat.
06 - Fry 3-4 rolls at a time for 2-3 minutes per side, turning with tongs, until golden brown and crisp. Transfer to a wire rack to drain.
07 - Stir the granulated sugar and cinnamon together. Roll the warm eggrolls lightly in the cinnamon sugar, dust with powdered sugar, then rest 2 minutes and slice each roll in half.
