Heat the oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.

In a bowl, stir together the cheddar, Parmesan, garlic powder, smoked paprika, Italian seasoning, black pepper, and cayenne if using.

Spoon tablespoon-sized mounds onto the prepared baking sheet, leaving about 2 inches between each one. Flatten each mound lightly into a thin circle.

Bake for 6-8 minutes, until the cheese is bubbling and the edges are golden brown. Start checking at 6 minutes because the chips darken quickly.

Let the chips cool on the pan for 5 minutes so they firm up. Lift with a thin spatula and transfer to a rack or paper towel before serving.
