Best Beef Broccoli Noodles (Print Version)

Tender beef, crisp broccoli, and chewy noodles tossed in a glossy soy-oyster sauce for a fast takeout-style dinner at home.

# Ingredients:

For the beef

01 - 1 lb (450 g) flank steak or sirloin, thinly sliced across the grain
02 - 1 tablespoon low-sodium soy sauce
03 - 1 tablespoon cornstarch
04 - 1 teaspoon toasted sesame oil
05 - 1/4 teaspoon black pepper

For the sauce

06 - 1/3 cup (80 ml) low-sodium soy sauce
07 - 2 tablespoons oyster sauce
08 - 1 tablespoon hoisin sauce
09 - 1 tablespoon brown sugar or honey
10 - 3/4 cup (180 ml) low-sodium beef broth or water
11 - 1 tablespoon cornstarch
12 - 1 teaspoon toasted sesame oil
13 - 1/4-1/2 teaspoon chili flakes or 1 teaspoon sriracha, optional

For the noodles and vegetables

14 - 8 oz (225 g) lo mein noodles or wide rice noodles
15 - 3 cups (250 g) small broccoli florets or broccolini pieces
16 - 2 tablespoons neutral oil, divided
17 - 3 cloves garlic, minced
18 - 2 teaspoons fresh ginger, minced
19 - 2 green onions, sliced
20 - 1 teaspoon sesame seeds, for garnish

# Instructions:

01 - Toss the sliced beef with soy sauce, cornstarch, sesame oil, and black pepper. Let it stand for 15-20 minutes while you prepare the noodles and sauce.
02 - Cook the noodles according to the package directions until just tender. Drain well and set aside. If using rice noodles, rinse briefly with warm water if they stick together.
03 - Boil or steam the broccoli for 1-2 minutes until bright green and crisp-tender. Drain well so it does not water down the sauce.
04 - In a bowl, whisk soy sauce, oyster sauce, hoisin, brown sugar, broth, cornstarch, sesame oil, and chili flakes until completely smooth.
05 - Heat 1 tablespoon oil in a large wok or skillet over high heat. Add half the beef in a single layer and cook for 1-2 minutes per side until browned at the edges. Transfer to a plate and repeat with the remaining beef.
06 - Reduce the heat to medium-high and add the remaining 1 tablespoon oil if the pan looks dry. Add garlic and ginger and stir for 20-30 seconds until fragrant.
07 - Return the beef to the pan with the noodles and broccoli. Pour in the sauce and toss for 1-2 minutes until thick, glossy, and coating the noodles. Garnish with green onions and sesame seeds.

# Notes:

01 - Slice beef across the grain for the most tender texture.
02 - Have all ingredients ready before cooking because the stir-fry moves quickly.
03 - Best served hot, right after the sauce thickens.
