# Ingredients:

For the caramel

01 - 1 cup (200 g) granulated sugar
02 - 2 tablespoons water, optional for easier melting
03 - 2 tablespoons strong hot coffee, for coffee caramel variation

Classic cream cheese flan

04 - 8 oz (225 g) cream cheese, softened
05 - 1 can (14 oz or 396 g) sweetened condensed milk
06 - 1 can (12 oz or 354 ml) evaporated milk
07 - 4 large eggs
08 - 2 teaspoons vanilla extract
09 - 1/4 teaspoon fine salt

Flavor variations

10 - 1 can (13.5 oz or 400 ml) full-fat coconut milk, replacing the evaporated milk for coconut flan
11 - 1/2 teaspoon instant espresso powder, for coffee caramel flan
12 - 1 prepared chocolate cake batter, enough for a 10-cup Bundt pan, for chocoflan
13 - 1 1/2 cups (360 ml) whole milk, 1/2 cup (120 ml) heavy cream, 3 large eggs, and 1/2 cup (100 g) sugar, for Japanese purin
14 - Toasted coconut, berries, whipped cream, or cherries, for serving

# Instructions:

01 - Set out a 9-inch round pan, loaf pan, or 10-cup Bundt pan for chocoflan. Heat the oven to 325°F (165°C) for regular flan or 350°F (175°C) for chocoflan.
02 - Cook the sugar in a heavy saucepan over medium heat, swirling as it melts, until deep amber. For coffee caramel, carefully add the hot coffee once the sugar is amber and swirl until smooth. Pour into the pan and tilt to coat the bottom.
03 - For classic flan, blend cream cheese, condensed milk, evaporated milk, eggs, vanilla, and salt until smooth. For coconut flan, replace the evaporated milk with coconut milk. For coffee flan, add espresso powder. Strain the mixture through a fine sieve.
04 - Pour the strained custard over the hardened caramel and cover tightly with foil. For chocoflan, spread chocolate cake batter over the caramel first, then slowly pour the flan custard over a large spoon so it lands gently on the cake batter.
05 - Place the mold in a larger roasting pan and add hot water halfway up the sides. Bake regular flan for 50-60 minutes, purin cups for 30-40 minutes, or chocoflan for 75-90 minutes. The center should jiggle softly and the cake layer should test done.
06 - Remove the mold from the water bath and cool to room temperature. Refrigerate for at least 4 hours, or overnight for the cleanest unmolding.
07 - Run a thin knife around the edge. Invert onto a rimmed serving plate and let the caramel run over the custard. Garnish with toasted coconut, berries, whipped cream, or cherries based on the variation.
