Easy Beef Cabbage Stir-Fry (Print Version)

Tender beef, crisp cabbage, carrots, and a glossy soy-hoisin sauce in a fast one-pan stir-fry.

# Ingredients:

For the beef

01 - 1 lb (450 g) flank steak or sirloin, sliced very thin across the grain
02 - 1 tablespoon low-sodium soy sauce
03 - 1 teaspoon cornstarch
04 - 1 teaspoon neutral oil
05 - 1/8 teaspoon baking soda, optional for tougher beef

For the sauce

06 - 1/3 cup (80 ml) low-sodium beef broth or water
07 - 2 tablespoons low-sodium soy sauce
08 - 1 tablespoon oyster sauce
09 - 1 tablespoon hoisin sauce
10 - 1 teaspoon toasted sesame oil
11 - 1/2 teaspoon red pepper flakes, or less to taste
12 - 1/4 teaspoon black pepper

For the stir-fry

13 - 1 tablespoon neutral cooking oil, plus more if needed
14 - 1 small yellow onion, thinly sliced
15 - 3 cloves garlic, minced
16 - 1 teaspoon fresh ginger, grated
17 - 1 large carrot, thinly sliced or julienned
18 - 5 cups (350 g) green cabbage, chopped or thinly sliced
19 - 2 green onions, sliced
20 - 1 teaspoon sesame seeds, optional

# Instructions:

01 - Toss the sliced beef with soy sauce, cornstarch, oil, and baking soda if using. Let it sit for 15 minutes while you cut the vegetables and mix the sauce.
02 - Whisk broth, soy sauce, oyster sauce, hoisin sauce, sesame oil, red pepper flakes, and black pepper in a small bowl.
03 - Heat a large wok or skillet over medium-high to high heat. Add oil, spread the beef in one layer, and sear for 1-2 minutes per side until browned but not fully cooked through. Transfer to a plate.
04 - Add a little more oil if the pan is dry. Stir-fry the onion for 1 minute, then add garlic and ginger for 20-30 seconds until fragrant.
05 - Add the carrot and cook for 1 minute. Add the cabbage and stir-fry for 2-3 minutes until the cabbage is glossy and tender-crisp.
06 - Return the beef and any juices to the pan. Pour in the sauce and toss for 1-2 minutes until the beef is cooked through and everything is coated. Finish with green onions and sesame seeds.

01 - Serve hot over steamed rice, noodles, or cauliflower rice.
02 - Slice beef across the grain for the most tender texture.
03 - Cook in batches if your skillet is not wide enough for the beef to sit in one layer.
