Fluffy Yellow Rice (Print Version)

Golden, tender yellow rice made with long-grain rice, turmeric, garlic, broth, lime, and cilantro in one pot.

# Ingredients:

For the rice

01 - 1 1/2 cups (285 g) long-grain white rice or basmati rice
02 - 2 tablespoons olive oil
03 - 1/4 cup (40 g) finely diced yellow onion
04 - 3 cloves garlic, minced
05 - 3/4 teaspoon ground turmeric
06 - 1/4 teaspoon ground cumin
07 - 2 1/4 cups (540 ml) low-sodium vegetable broth
08 - 3/4 teaspoon fine salt, plus more to taste
09 - 1/4 teaspoon black pepper

To finish

10 - 1 tablespoon fresh lime juice
11 - 3 tablespoons chopped fresh cilantro

# Instructions:

01 - Place the rice in a fine-mesh sieve and rinse under cool running water until the water looks mostly clear. Drain very well.
02 - Warm the olive oil in a medium saucepan over medium heat. Add the onion and cook for 2-3 minutes until softened, then stir in the garlic for 30 seconds.
03 - Add the turmeric and cumin and stir for 20-30 seconds until fragrant. Keep the heat moderate so the garlic does not brown.
04 - Add the drained rice and stir until every grain is coated in the seasoned oil. Cook for 2 minutes, stirring often, until the rice looks glossy.
05 - Pour in the broth, salt, and pepper. Bring to a boil, stir once, cover, reduce the heat to low, and cook for 15-18 minutes until the liquid is absorbed.
06 - Remove the pan from the heat and keep it covered for 10 minutes. Fluff with a fork, then fold in lime juice and cilantro. Taste and adjust salt if needed.

01 - Rinsing and draining the rice helps the grains stay separate.
02 - Keep the lid closed during cooking and resting for the best texture.
03 - Use chicken broth instead of vegetable broth if you do not need the recipe to be vegan.
