Place the rice in a fine-mesh sieve and rinse under cool running water until the water looks mostly clear. Drain very well.

Warm the olive oil in a medium saucepan over medium heat. Add the onion and cook for 2-3 minutes until softened, then stir in the garlic for 30 seconds.

Add the turmeric and cumin and stir for 20-30 seconds until fragrant. Keep the heat moderate so the garlic does not brown.

Add the drained rice and stir until every grain is coated in the seasoned oil. Cook for 2 minutes, stirring often, until the rice looks glossy.

Pour in the broth, salt, and pepper. Bring to a boil, stir once, cover, reduce the heat to low, and cook for 15-18 minutes until the liquid is absorbed.

Remove the pan from the heat and keep it covered for 10 minutes. Fluff with a fork, then fold in lime juice and cilantro. Taste and adjust salt if needed.
