Spicy Dumpling Sauce (Print Version)

A savory, tangy, garlicky spicy dumpling sauce you can stir together in 5 minutes for potstickers, wontons, gyoza, and frozen dumplings.

# Ingredients:

For the sauce

01 - 3 tablespoons low-sodium soy sauce
02 - 1 1/2 tablespoons unseasoned rice vinegar
03 - 1 tablespoon chili garlic oil or chili crisp oil
04 - 1 teaspoon hot water
05 - 1 teaspoon granulated sugar
06 - 1/2 teaspoon toasted sesame oil
07 - 1 small garlic clove, finely grated or minced

For finishing

08 - 1 green onion, thinly sliced
09 - 1 teaspoon toasted sesame seeds
10 - 1/2 teaspoon grated fresh ginger, optional

# Instructions:

01 - Stir the hot water and sugar together in a small bowl until the sugar is fully dissolved.
02 - Add soy sauce, rice vinegar, chili garlic oil, sesame oil, garlic, and ginger if using. Stir until the sauce looks glossy and even.
03 - Fold in the sliced green onion and toasted sesame seeds. Taste and adjust with a little more vinegar for tang or chili oil for heat.
04 - Let the sauce sit for 3-5 minutes before serving. Spoon into small dipping bowls or drizzle over hot dumplings.

# Notes:

01 - Makes about 1/3 cup sauce, enough for 20-24 dumplings.
02 - Best served at room temperature.
03 - Use gluten-free tamari instead of soy sauce if needed.
