Spicy Garlic Chili Oil Dumplings (Print Version)

Frozen dumplings tossed in a sizzling homemade garlic chili oil sauce with soy, vinegar, sesame, scallions, and cilantro.

# Ingredients:

For the dumplings

01 - 16-20 frozen dumplings, pork, chicken, shrimp, or vegetable
02 - Water for boiling
03 - 1 tablespoon reserved hot dumpling cooking water, plus more as needed

For the garlic chili oil sauce

04 - 4 garlic cloves, finely minced
05 - 1 tablespoon red chili flakes, or less for mild heat
06 - 1 tablespoon toasted sesame seeds, plus more for garnish
07 - 2 green onions, thinly sliced, plus more for garnish
08 - 2 tablespoons chopped fresh cilantro
09 - 1 tablespoon granulated sugar
10 - 3 tablespoons soy sauce
11 - 2 tablespoons rice vinegar
12 - 2 teaspoons toasted sesame oil
13 - 1/3 cup (80 ml) avocado oil or another neutral high-heat oil

# Instructions:

01 - Bring a pot of water to a gentle boil. Cook the frozen dumplings according to the package directions until tender and fully hot. Reserve 1 tablespoon of the cooking water, then drain carefully.
02 - In a large heatproof bowl, combine the garlic, chili flakes, sesame seeds, green onions, cilantro, sugar, soy sauce, rice vinegar, and sesame oil.
03 - Warm the avocado oil in a small saucepan over medium heat until shimmering, about 2-3 minutes. Do not let it smoke.
04 - Carefully pour the hot oil over the garlic chili mixture. Let it sizzle, then stir until the sugar dissolves and the sauce looks glossy.
05 - Add the hot drained dumplings to the bowl. Toss gently until coated, adding the reserved dumpling water if the sauce needs loosening.
06 - Finish with extra green onions and sesame seeds. Serve immediately while the dumplings are hot and slick with chili oil.
