Sweet, Savory, Sticky Teriyaki Beef (Print Version)

Thin-sliced beef seared hot and tossed in a glossy homemade teriyaki sauce with garlic, ginger, sesame, and green onions.

# Ingredients:

For the beef

01 - 1 lb (450 g) flank steak or sirloin, thinly sliced across the grain
02 - 1 1/2 tablespoons cornstarch
03 - 1/2 teaspoon kosher salt
04 - 1/4 teaspoon black pepper
05 - 1 1/2 tablespoons neutral oil, such as avocado or canola oil

For the teriyaki sauce

06 - 1/4 cup (60 ml) low-sodium soy sauce
07 - 1/4 cup (60 ml) water
08 - 2 tablespoons mirin, or 2 tablespoons water plus 1 teaspoon extra brown sugar
09 - 1 1/2 tablespoons packed brown sugar
10 - 1 tablespoon honey
11 - 1 tablespoon rice vinegar
12 - 3 cloves garlic, minced
13 - 1 teaspoon finely grated fresh ginger
14 - 2 teaspoons cornstarch mixed with 1 tablespoon cold water
15 - 1 teaspoon toasted sesame oil

For serving

16 - 3 cups cooked white rice, for serving
17 - 2 green onions, thinly sliced
18 - 1 tablespoon sesame seeds

# Instructions:

01 - Slice the beef thinly across the grain. Pat dry, then toss with cornstarch, salt, and pepper until lightly coated.
02 - In a bowl, whisk soy sauce, water, mirin, brown sugar, honey, rice vinegar, garlic, ginger, and the cornstarch slurry until smooth. Keep the sesame oil separate for finishing.
03 - Heat oil in a large skillet or wok over medium-high to high heat. Add beef in a single layer and sear for 1-2 minutes per side. Work in batches if needed, then transfer to a plate.
04 - Reduce heat to medium. Pour the sauce into the skillet and scrape up the browned bits. Simmer for 1-2 minutes until shiny and thick enough to coat a spoon.
05 - Return the beef to the skillet and toss for 1-2 minutes until every piece is coated and heated through. Add a splash of water if the sauce gets too thick.
06 - Turn off the heat and stir in sesame oil. Serve over hot rice with green onions and sesame seeds.
